Super Food Friday– Red Cabbage

Now, I know that cabbage isn’t the most exciting thing to talk about, but there are some amazing benefits to this cruciferous vegetable!

Red Cabbage is High in:

  • Antioxidants
  • Vitamin A
  • Vitamin C
  • Phytonutrients
  • Vitamin K
  • Iron

Benefits of Red Cabbage:

  • Boosts immune syste
  • Fights inflammation
  • Keeps bones strong
  • Combats disease
  • Improves gut health

Both red and green cabbage are great for you, but red cabbage has more iron, antioxidants like anthocyanin and vitamin A. Not to mention, it’s so pretty! Try this recipe:

Healthy Cole Slaw

INGREDIENTS:
3 tablespoons paleo mayonnaise
3 tablespoons kefir
1 tablespoon dijon mustard
2 teaspoons apple cider vinegar
2 cups shredded red cabbage
2 cups shredded green cabbage
1 cup grated carrots
sea salt, to taste
black pepper, to taste
DIRECTIONS:
Combine mayonnaise, kefir, mustard and apple cider vinegar in a small bowl.
In a large mixing bowl, add in cabbage and carrots.
Stir in mayonnaise mixture until well combined.
Season with salt and pepper and serve immediately.
