Super Food Friday– Avocado

Another one of our favorites! Avocados can be used in so many ways. They are technically a fruit, but can be used in sweet or savory dishes. From main dishes, to condiments, even to desserts, this is one versatile food.

Benefits of avocados:

  • Good for your heart
    • High in monounsaturated fat
  • Lowers risk of metabolic syndrome
    • Regulates the hormones- insulin, cholesterol and triglycerides- that cause heart disease, diabetes and stroke
  • Assists with weight loss and digestive health
    • High in fiber
    • High in healthy fats
    • High in protein
    • Low in carbohydrates
  • Boosts your mood
    • The healthy fats in avocados balance important hormones, like neurotransmitters
    • Whole food, healthy fats are a great way to reduce depression symptoms

Avocados taste great on their own and we have found so many ways to use them. They pair very well in desserts with chocolate. Spread them on toast, burgers or your sandwich instead of using mayo or cheese. Simply mash one up and dip some tortilla chips in for a filling lunch. Add them to your salad, eggs or a smoothie. Bake an egg in the center. Sprinkle some diced avocado onto soup or chili. Even use it for a deep hair conditioner or face moisturizer!

Mango Avocado Salsa

INGREDIENTS:
1 mango, diced
1 avocado, diced
4 medium tomatoes, diced
1 jalapeño pepper, seeded and minced
½ c. fresh cilantro, chopped
3 cloves garlic, minced
1 tsp. sea salt
2 Tbsp. fresh lime juice
¼ c. red onion, chopped
3 Tbsp. olive oil
DIRECTIONS:
Add all ingredients to a bowl and toss until everything is mixed together. Chill and serve with with organic blue corn chips.

 

Chocolate Avocado Mousse

INGREDIENTS:
½ c. dates, soaked
½ c. pure maple syrup
1 tsp. vanilla extract
2-3 avocados
¾ c. cocoa powder
½ c. water
DIRECTIONS:
Blend dates, maple syrup and vanilla until smooth. Add avocado and cocoa and process until creamy, scrape down the sides of the blender with a spatula when needed.
Add the water and blend until smooth. Serve chilled. Store in the refrigerator up to 3 days or in the freezer up to 2 weeks.

 

Creamy Avocado Dressing

INGREDIENTS:
1 large avocado
1 garlic clove, peeled
1/2 Tbsp. fresh lime juice
3 Tbsp. olive or avocado oil
1/4 tsp. sea salt
1/4 tsp. ground black pepper
Water
DIRECTIONS:
In a mini food processor add the garlic, avocado, lime juice, oil, salt and pepper. Process until smooth, stopping to scrape down the sides a few times. Thin the salad dressing out with a little bit of water, until it reaches desired consistency. Keep in a glass jar in the refrigerator for up to a week.
